- • yellow split peas 500g (18 oz)
- • red onions, roughly chopped 3
- • garlic cloves, chopped 2
- • warm water 1 liter (3⅓ cups)
- • lemon juice juice of 2 lemons
- • olive oil ⅓ cup (plus 2-3 tbsp for sautéing)
- • fresh thyme a few sprigs
- • salt and freshly ground pepper to taste
Method
- 1 Rinse the split peas thoroughly with water.
- 2 Heat a large pot over medium-high heat with 2-3 tablespoons olive oil; sauté the chopped onions, garlic and fresh thyme until the onions begin to caramelize.
- 3 Add the peas and stir to coat. Pour in the warm water and the ⅓ cup olive oil; reduce heat to medium and season with salt and pepper. Simmer covered for 40-50 minutes until the peas are thick and mushy, skimming any white foam from the surface.
- 4 Stir in the lemon juice. Transfer the mixture to a food processor and blend until smooth and creamy.
- 5 Serve warm or at room temperature with a drizzle of olive oil and a topping of diced raw onion, capers or chopped parsley.
