Ingredients

  • yellow split peas 500g (18 oz)
  • red onions, roughly chopped 3
  • garlic cloves, chopped 2
  • warm water 1 liter (3⅓ cups)
  • lemon juice juice of 2 lemons
  • olive oil ⅓ cup (plus 2-3 tbsp for sautéing)
  • fresh thyme a few sprigs
  • salt and freshly ground pepper to taste

Method

  1. 1 Rinse the split peas thoroughly with water.
  2. 2 Heat a large pot over medium-high heat with 2-3 tablespoons olive oil; sauté the chopped onions, garlic and fresh thyme until the onions begin to caramelize.
  3. 3 Add the peas and stir to coat. Pour in the warm water and the ⅓ cup olive oil; reduce heat to medium and season with salt and pepper. Simmer covered for 40-50 minutes until the peas are thick and mushy, skimming any white foam from the surface.
  4. 4 Stir in the lemon juice. Transfer the mixture to a food processor and blend until smooth and creamy.
  5. 5 Serve warm or at room temperature with a drizzle of olive oil and a topping of diced raw onion, capers or chopped parsley.
