Ingredients
- • cooked spaghetti or linguine (leftover is ideal) 300 g
- • eggs 4
- • Pecorino Romano or Parmigiano, grated 60 g
- • freshly ground black pepper to taste
- • extra virgin olive oil 3 tbsp
- • fine sea salt to taste
Method
- 1 Beat eggs with cheese, salt and plenty of pepper. Toss with the cooked pasta until coated.
- 2 Heat olive oil in a nonstick pan over medium-high. Add the pasta mixture and press into an even cake.
- 3 Cook without stirring until the bottom is deeply golden and set, then flip (or finish under the broiler).
- 4 Slide out, cut into wedges, and serve hot or at room temperature.
