Ingredients
- • eggplants 2 medium
- • ripe tomatoes, grated 2
- • garlic cloves, minced 3
- • olive oil 3 tbsp
- • ground cumin 1 tsp
- • paprika 1/2 tsp
- • fresh cilantro, chopped 3 tbsp
- • lemon juice 1 tbsp
Method
- 1 Roast or char eggplants until collapsed; scoop flesh and chop roughly.
- 2 Sauté garlic in olive oil, add grated tomato and spices; cook 10 minutes.
- 3 Mash in eggplant and simmer until thick.
- 4 Finish with cilantro and lemon; serve warm or room temp with bread.
