Ingredients
- • eggs 6
- • black tea leaves 2 tbsp
- • light soy sauce 1/3 cup
- • dark soy sauce 2 tbsp
- • star anise 2
- • cinnamon stick 1 small
- • Sichuan peppercorns 1 tsp
- • rock sugar or brown sugar 2 tbsp
Method
- 1 Hard-boil the eggs 8 minutes, cool in ice water, then gently crack the shells all over (keep shell on).
- 2 Simmer tea, soy sauces, spices, sugar, and 2 cups water 5 minutes.
- 3 Add the cracked eggs and simmer on low 1 hour, turning occasionally.
- 4 Steep off heat at least 30 minutes (or overnight) for deeper marbling. Peel and serve.
