- • Pastry flour (for the wafer shell) 3.5 cups
- • Cold water (for the shell) 1 cup
- • Olive oil (for the shell) ¼ cup
- • Egg yolks (for the filling) 8
- • Sugar (for the filling) 1.5 cups
- • Rice flour (for the filling) ½ cup
- • Water (for the syrup) 1 glass, plus ½ cup cold for the rice flour
Method
- 1 Make the shell dough: combine the pastry flour, cold water and olive oil in a bowl and knead until a dough-like consistency forms.
- 2 Roll the dough very thin with a rolling pin, lay it into a greased mold and shape it into the desired forms (such as shells or barrels).
- 3 Make the filling syrup: heat the sugar with one glass of water in a saucepan until it reaches 245°F (118°C) to form a syrup.
- 4 In a separate saucepan, dissolve the rice flour in ½ cup cold water, add the boiled syrup and cook on low heat for 5 minutes.
- 5 Let cool slightly, then incorporate the egg yolks.
- 6 Continue stirring and cook an additional 5 minutes on low heat until thickened, then let cool.
- 7 Pour or pipe the filling into the molded wafer shells.
- 8 Optional: bake at 250°F (120°C) for 3–4 minutes for a crunchier shell.
