Ingredients

  • fresh lime juice 5 tbsp
  • palm sugar or light brown sugar 3 tbsp
  • fish sauce 3 tbsp
  • garlic, minced 3 cloves
  • crushed red chili flakes 1/2 tsp
  • green (unripe) papaya, peeled and seeded 1 medium (1-1.5 lb)
  • carrot, peeled 1 medium
  • green beans, trimmed and cut into 1-inch pieces 1 handful
  • tomato, cut into chunks 1 large
  • shallot, thinly sliced 1 medium
  • roasted peanuts, coarsely chopped 1/4 cup

Method

  1. 1 Whisk the lime juice, palm sugar, fish sauce, garlic and chili flakes until the sugar dissolves.
  2. 2 Use a julienne peeler or mandoline to shred the green papaya and carrot into thin strands.
  3. 3 Toss the papaya and carrot in a large bowl with the green beans, tomato and shallot, then pour over the dressing and toss thoroughly (pound lightly with a pestle if you have one, to bruise the papaya).
  4. 4 Pile onto a platter and sprinkle with the chopped peanuts to serve.
